We Applied. We Waited. And Waited. 6 months later! 🍾
Back in early December, full of optimism (and perhaps a little naivety), we lodged our liquor licence application.
“How long could it take?” we thought.
Cue collective laughter from anyone who’s ever done this before.
What followed was… a journey.
A long, document-filled, form-heavy, “just one more thing” kind of journey.
Declarations. Plans. Policies. Floor layouts. Clarifications. More clarifications. At one point we’re fairly certain we could’ve applied to run a small country if needed.
Days turned into weeks. Weeks turned into months.
But — as with all good things (and most government processes)…
we got there.
Licence: secured. ✔️
Sanity: mostly intact. ✔️
Fridge: ready. ✔️
And now, the fun part begins.
We’re officially pouring Tasmanian wines, sparkling, beers and ciders — best enjoyed exactly as intended: slowly, with a view, and preferably paired with one of our grazing boards.
